INGREDIENTS FOR SALMON ASPARAGUS RECIPE
- 450 g salmon fillets, divided
- 2 tablespoons vegetable broth or chicken broth
- 1 1/2 tablespoons fresh lemon juice, or to taste
- 1 tablespoon of your favorite chili sauce (we used Sriracha)
- 4 teaspoons chopped garlic (4 cloves)
- Salt and freshly ground black pepper to taste
- 3-4 tablespoons butter, cut into small cubes (or ghee)
- 2 tablespoons fresh chopped parsley or coriander
- 450 g medium asparagus, woody ends removed
INSTRUCTIONS
1. To prepare oven-baked salmon in foil packages: Preheat oven to 220 degrees. Cut two sheets of thick aluminum foil (35 x 30 cm) and place each piece separately on the table. Combine the stock, lemon juice and chili sauce in a small bowl.
2. Season both sides of the salmon fillets with salt and pepper and spread the salmon on the aluminum foil near the center. Then place the cut asparagus on one side of the salmon along the length of the foil.
3. Season the salmon fillets with salt and pepper and sprinkle with garlic. Pour the broth, lemon juice and chili sauce mixture generously over the salmon fillets and asparagus.
4. Divide the butter pieces evenly into foil bags and place them in layers on top of the salmon fillet and asparagus.
5. Wrap the salmon foil bags in and crimp the edges together, then wrap the ends in. Don’t wrap too tightly – leave a little extra space for heat to circulate.
